How to Make Green Monster Pancakes

I was introduced to these pancakes from my friend Melissa who is a health coach in Colorado. One of her children has severe food allergies and cannot tolerate eggs, nuts, dairy, just to name a few. These pancakes are dairy-free and egg-free. So basically vegan! I have tried them a million different ways. I have tried this recipe in the form of waffles.. but they work better as a pancake!

 I love them because you really can’t mess them up. And I hate to measure things. They’re also perfect for babies and toddlers. I’ve been feeding them to my baby since he was 7 months old.  

For these green monster pancakes, I add spinach for an extra boost of vitamins and minerals. But you can add sweet potatoes (they just won’t be green monsters they will be orange!), avocado, heck- you can add green beans if you have them on hand! You can add blueberries (Stirred in at the end) or chocolate chips on top if you really want to coax your child into eating!

You know what is also cool about this recipe? You can pour it into mini muffin trays and make muffins for your kids! They’re a perfect snack to add to school lunches. If you need more school lunch ideas, head over to my blog post about school lunches .

And another side note: I make this recipe without salt because I try to avoid adding salt in my babies food. Babies can have some salt and it does help their bodies absorb water. However, 400mg is the adequate intake for the day, and thats not much... The reasoning is their kidneys are immature and they can’t handle a lot of sodium. But realize there is sodium is everything including breast milk! (about 42mg per 8oz).

These green monster pancakes are healthy for your babe (and for you!) They contain approximately 2 grams of protein, 2 grams of fiber in EACH pancake! The protein varies depending on the milk you use- if you’re using cows milk it’ll be about 2.8gm protein for each cake and if your using almond milk, it will be about 1.8gm for each. I used oat milk because thats what I had on hand. There is no wrong way to make these. They are reallyyy hard to mess up!

I use old fashioned oats because I also use it for my oatmeal. But 1 minute quick oats are great too. I prefer organic oats. Some big brand oatmeals may contain glyphosate, which is a chemical in ‘round up’ herbicide linked to cancer. Back to the recipe. 

Here is how I make these little monsters… 

 Green Monster Pancakes

(Makes 16 pancakes)

2 cups Old-fashioned oats*

1 ½ cup milk**

2 large ripe bananas 

2 Tbsp flax meal (if you don’t have flax I recommend 1 egg to help bind everything)

1 tsp baking powder

½ tsp cinnamon (or 1 drop of Young Living cinnamon vitality oil)

1 large handful of organic spinach 

*1-minute Quick-cook oats also work in the recipe

**I used oat milk but you can use cows milk, almond, coconut

Optional: Chia seeds, other green vegetables for extra vitamins and fiber

1)    Put ALL ingredients in a high speed blender.  Start slow then blend for 1 minute on high speed. If you have a Vitamix, this is the time to use it! it is a game-changer. You can also use a food processor if you don’t have a blender.

2)    Cook pancakes on medium heat until lightly browned. You don’t need any butter/oil if you have a nonstick pan. 

3)    Store leftovers in a glass container for 2-3 days. 

4)    Lightly toast leftover pancakes for your baby or kids as needed. 

My favorite toppings: almond butter (creamy/no salt for baby), vegan or regular butter, maple syrup, hemp seeds, almond slivers, berries.
